Have you ever tried making biscotti at home? These are classic, twice-baked cookies. They are incredibly easy to make and flavours can be customised very easily. Today I am sharing my favourite almond apricot flavour but you can use your favourite combination here!!!
Earlier I used to think that making biscotti at home is a difficult task but in reality, it's not. Biscotti dough is a very simple dough and you can customise it with your favourite essence and add-ins. It's completely different from normal cookies.
To make this cookie dough you really don't need any special tool. Although I used my hand mixer but its optional. You can do this process completely by hand. You will have to divide this dough into 2 equal "logs". They need to be baked first time for 30 min then allow it to cool down completely. Now using a sharp bread knife cut the dough into diagonals. Spread onto the tray, bake it, then flip it and then bake it again. Seems a lot of tasks but believe it's super easy and fun.

TIPS FOR MAKING BISCOTTI
If you have an electric hand mixer use but the can be put together using hands also.
I used whole almonds but I would suggest you to use slivered almonds, this will make it easy for you to cut into pieces easily.
Make sure your biscotti cools completely before cutting it.
1/2 cup (113g) butter room temperature
1/2 cup (100g) sugar
2 large eggs
1 1/4 cup (160g) all-purpose flour
1.5 tsp baking powder
1/2 tsp vanilla extract
1/2 cup slivered almond
1/2 cup chopped apricot
Preheat oven to 180°C.
In a bowl beat butter and sugar together until creamy. Beat egg one at a time.
In a separate bowl mix in baking powder and flour until well blended. Stir in almond and apricot. Set this aside.
As the dough is too sticky, using some dry flour make 2 loaves out of the dough. Put these into the baking tray.
Bake for about 30 minutes, remove from the oven and let cool for around 30 minutes.
Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 8-10 minutes each side.
