This basic recipe is just a simple, plain, basic fundamental for a light and fluffy muffin. This recipe doesn't call for any special ingredient or tools. With 2 bowls and a whisk, you can have freshly baked muffins anytime you want. That's what I am looking for.
While baking these muffins you can use any kind of apple you want. Be it green apple or red apple both will suit the recipe. While baking these muffins you need to understand the logic of mixing apples in the dry ingredients first. This way flour coats the apples first which helps them in distributing equally while baking. Otherwise, they will sink to the bottom.
These muffins are ultimate for tea time, coffee time and even breakfast too.

2 Apples (peeled and cut into small pieces)
2 tbsp curd
1/2 cup (100 ml) milk
1/3rd cup (80 ml) oil
1 1/4 cup (160 g) all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup (150 g) sugar
1/2 tsp vanilla essence
50 g butter
50 g all-purpose flour
80 g brown sugar
1 tsp cinnamon powder
Line your muffin tray with 12 liners. Preheat oven at 180C.
In a bowl mix all wet ingredients like oil, milk, curd together. Set this aside.
In a separate bowl sieve together flour, sugar, baking powder and salt. If using whisk then mix well. Set this aside.
Add the peeled and cubed apple into dry ingredients first. If you won't coat apple with dry ingredients they will sink to the bottom. So this step is IMPORTANT.
Pour the wet ingredient into dry ingredient and mix well.
Fill the muffin cavity 3/4th with the batter.
For crumble mix butter, flour, sugar and cinnamon using a fork or hands. Sprinkle 1 tbsp of the mix on top of each muffin.
Bake muffins for 22 min at 180C.
