Cherry Clafoutis Recipe

Have you ever made a clafoutis? Well, this was my first time too. I got to know about this french dessert while I was looking for some cherry dessert. It’s one of the easiest and elegant dessert you can make, especially if you find yourself with extra cherries on hand. 


"Clafoutis" is a type of flan made of fruit, typically cherries, baked in a sweet batter. It’s basically a firm egg-based custard whose consistency matches a pancake batter. This dessert doesn't require a lot of ingredients and is a basic no-machine recipe. If you like crunch in the dessert you can use some slivered almonds or some walnut.

How to use Cherries?

Traditionally people use full cherries in the clafoutis. But I don't like the seed in the mouth. You can buy a pitter online or what I did was, I carefully cut them in half and then carefully take the seed out.

Cherry Clafoutis Recipe

Ingredients:

  1. 1.5 cup milk

  2. 3/4 cup (95 g) flour

  3. 1/2 cup Amul heavy cream

  4. 4 eggs

  5. ½ cup (100 g) sugar

  6. 1 tsp vanilla essence

  7. 1/4 tsp salt

  8. 200 g half-cut cherries

Recipe:

  1. Preheat oven to 180 C.

  2. In a large bowl combine flour, sugar, cream, vanilla essence, salt and eggs together. Whisk everything to combine well.

  3. Place cherries in a single layer in the bottom of a greased 8” pan. Pour batter over cherries.

  4. Bake for 35-40 mins. Allow it to cool completely. Refrigerate until ready to serve.

  5. To serve dust clafoutis with powdered sugar.
