Easy Cherry Galette

One Day I was going through a lot of Instagram stories and I saw people making multiple versions of a delicious-looking dessert. I was awestruck what it is? My curiosity took me to Google - What is a Galette? And this is what I came up with "Galette is simply a rustic, free-form tart prepared with a single crust. It can be both sweet and savoury.

All you need for this tempting dessert is pastry dough and some cherry mix. And in my opinion, the cheery is a shiny, vibrant, crimson fruit to eat which everyone likes. And I am making pastry for the last 3 years so it's not rocket science for me. There are multiple versions of this Galette. And this simplified pie is not only tempting but easy to bake. I would suggest you try both sweet and savoury with the same base.

Be careful while working with pastry dough!!
If you are looking for a great taste, you have to be very patient with your pastry dough. You need to control the dough temperature and to be very creative during that time. You need to mind that if any factor that is mentioned changes, it is going to impact your pastry output. e.g. if your dough is warm it will not hold the shape. And if you knead the dough too much it will develop the gluten that will not make our pastry flaky which we don't want.

Ingredients:
For Pastry:
1-1/4 cup all-purpose flour
1/4 tsp salt
113g (1/2 cup) butter (It shouldn’t be frozen butter)
3-4 tbsp cold water
For the cherry mix:
250 gm fresh cherries
3 tbsp corn flour
50 gm brown sugar (Depending upon your taste you can adjust the sugar)
1 beaten egg to brush Galette
Method:
Preheat your oven at 180C.
For cherry mix:
Add washed and dried cherries in a bowl. Add corn flour and sugar. Mix well. You need to do this just before filling the pastry.
For Pastry:
Mix flour and salt in a bowl.
Now add solid cubed butter in the flour mix. Using your finger tips or pastry cutter, mix the butter in the flour. At the end you will see sand like structure.
Now add cold water and work quickly and make sure you are not kneading it, simply get the dough together in a ball shape.
Divide it into 4 equal parts and cling wrap them. Keep them in the freezer for a minimum of 2 hours or overnight.
Roll the dough in a small circle with 1/2 inch thickness. Fill the centre with the cherry mix and fold the sides inwards.
Brush each pastry with beaten egg and sprinkle some sugar over the top.
Bake this for 20 min at 180C. When it's done you see all edges are brown and cherries have become soft.
Serve warm with some ice cream on top of it or with some whipped cream will be add-on, enjoy your summer with this delicious dessert.
