Eggless Almond Tea Cake

In India a cup of tea in the morning and evening is must for everyone. To complement the taste we serve it with biscuits or some snacks. But have you ever thought of have your tea/coffee with a homemade almond tea cake and when it is eggless it becomes a recipe for everyone. Once you've tried this tea cake recipe, I am sure you will make it time and time again.
An easy tea cake that comes ready in less than an hour with an amazing smell and taste.The top is covered with a few dollops of your favourite jam(I am using mixed fruit here) which takes this cake to some other level.
For this cake you really don't need any special equipment/ingredients. This recipe can be put together easily just by your hands. I am using a 8' loaf pan here but you can use any sized/shaped pan(don't use anything bigger than 8' or 9') . Just be sure to adjust the cooking time accordingly.
Ingredients:
200 gm condensed milk
113 gm butter(at room temp)
150 ml milk
1.5 tsp almond essence
200 gm all purpose flour
50 gm grounded almond
Pinch of salt
Method:
Add butter and condensed milk in a bowl and whisk for 3-4 min.
In a separate bowl whisk flour, baking, salt and grounded almond.
Add almond essence in the milk.
Now add 2 parts of the liquid and 3 parts of the flour, mix the cake batter. (See below for details)
Add the batter in a loaf pan and top with few dollops of jam
Bake at 170c for 40-45 min
In this cake we are mixing the cake batter in parts thats because this way we avoid lumps. It makes the cake batter smooth. By 2 parts of the liquid and 3 parts of flour I mean, first we add half of the liquid and 1/3rd of the flour. Mix the batter softly. Then we add rest of the milk and again 1/3rd of the flour. We always end up with the flour because the fat in the batter may not mix well with liquid so at the end we add flour so as to make it easy.
