It is a very easy cake recipe prepared with no fancy equipment. This cake consists of a vanilla base drizzled with honey syrup and topped with jam and coconut. This flavoured cake is hugely popular in south India.
For this cake, I have made an 8*8 inch square vanilla cake. This sponge cake is so soft and light that it can absorb any liquid we will fill in. To bake a vanilla cake people follow different recipes but I love making my cake using milkmaid. The sponge cake recipe I am sharing today with you guys is the easiest one. You don't need any special tool or equipment and it can be put together in just 5 min.
For this recipe, I am using vanilla sponge cake, honey syrup, mixed fruit jam(you can use any jam of your choice) and dried coconut. To put this cake batter together make sure all your ingredients are at room temp. For this cake, I am using a combination of condensed milk, milk, oil, flour and raising agents. I personally love this method because of its ease.
For Sponge Cake:
1 1/4 cup (165 g) all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup (250 g)condensed milk
1/2 cup (120 ml) milk
1/2 cup (100 ml) oil
1 tsp vanilla essence
1 tsp rose essence
1 tsp vinegar
For Honey Syrup:
1/2 cup water
3-4 tsp sugar
3 tbsp honey
Jam & Coconut Filling:
3 tbsp mixed fruit jam
Prepare an 8*8 inch square pan using baking paper. Preheat oven at 180c for 10 min.
In a bowl using a whisk mix all wet ingredients until it becomes uniform. In a separate bowl sift all dry ingredients. Now fold in dry ingredients into wet with very light hands.
Pour the batter in the prepared pan and bake the cake for 25-30 min.
To prepare honey syrup boil water and sugar together until the sugar melts completely. Let this sugar mix cool down a bit. Now add honey to it.
To prepare jam layer melt jam a but either on a gas stove or in a microwave.
To prepare cake poke holes in the cake. Drizzle the honey syrup on top. Spread out warm jam onto the cake evenly and then cover it with shredded coconut.
