Updated: Jun 26, 2020
This is a moist, soft and delicious cake what we all look for all the time. It's a cake which my family always appreciates a lot because you need a lot of decorations and they don't have to eat frosting with it. I am pretty sure you gonna enjoy this recipe.
I always prefer making cake with seasonal fruits because I just love fruits in my cake and the natural flavour and sweetness increase the overall flavour. During any time of the year, you will always find bananas in my kitchen and whenever I am out of options I make a banana cake. Below is a well-tried and tested recipe and it can never go wrong. You just mash the bananas then mix all the ingredients, bake it and it's done. Simple right? To easy most of your's comfort today I am sharing an eggless recipe.

To make a cake eggless we have a number of replacers available and each plays a different role with the taste. But sometimes you don't want to think about replacing eggs in a recipe. That's what this recipe is all about. This is a very easy recipe with no fancy ingredients and no complicated process.
Also, it takes only 10 min to put this cake batter in the baking pan. You just need to follow my instincts and tips. You will have a soft, crumbly and a delicious cake to taste.
If you will go through my earlier posted recipes you will find an eggless chocolate banana cake version. You may think both the recipes are same but that's not true. If you will see the procedure they are completely different.
How to prepare bananas?
In my Eggless Chocolate Banana Cake I did talk about how to ripe bananas. Please go through that section.
What is Condensed Milk?
Condensed milk is cow's milk from which water has been removed (roughly 60% of it). It is most often found with sugar added, in the form of sweetened condensed milk (SCM), to the extent that the terms "condensed milk" and "sweetened condensed milk" are often used interchangeably today. SCM is a very thick, sweet product, which when canned can last for months without refrigeration if not opened(ref).
Why am I using Condensed Milk?
While baking cake, pastries and cookies, condensed milk lends moisture, flavour and colour to the crust. As it is already sweetened so we can balance out the amount of sugar used in the recipe. Condensed milk also balances out the overall flavour, its thick and has a strong flavour which when used properly with other ingredients increases the overall flavour of the baked goods.

1/2 ts baking soda
1 tsp baking powder
1/2 tsp cinnamon powder

113 g (1/2 cup) soft at room temp butter
100 ml(1/2 cup) room temp milk.
Recipe:
Preheat your oven at 180C for 10 min. Prepare a bundt pan by applying oil in it thoroughly.
In a bowl sift all dry flour, baking soda, baking powder, cinnamon powder, salt. Keep it aside.
In a separate bowl add butter and sugar together. Whisk it for 5 min using a hand whisk. Now add condensed milk and mix until it becomes uniform.
Now add the dry ingredients in 2 parts into the wet alternating with milk. This is a dense batter. At the end blend in the bananas and chocolate chip into the batter.
Pour the batter in the pan and bake at 180c for 40-50 min.
For serving, I am placing some bananas on top and chocolate sauce.
Happy Baking!!!
