As you have landed on this page I am assuming that you know Bakeinline make and sell home granola also. Multiple times people asks me we know its healthy and tasty. It can be eaten as an evening snack, as a muesli for breakfast and in yogurt parfait. But are there any more suggestions you have so that we can add 1 more variety in out diet and enjoy it. They are not only great for adults but for children also.
One day I was chatting with my office colleague regarding his 7 years old daughter. He said he wants her to eat all kind of seeds like(pumpkin seeds, sunflower seeds, chia seeds etc), but how can I make her to eat it without resistance. He asked to me to think and come up with a new idea. Also he added that his daughter is a big fan of cakes and pastries. I could have baked muffins using all purpose flour but that would have reduced the total health quotient of it. So I decided to go with whole wheat flour only.
Then I came up with the idea of using my homemade granola in the muffins. There are multiple ways you can replace all purpose flour with whole wheat in a recipe. But most of them just changes the texture and make our muffins go dense. To overcome with this issue I always replace milk in my recipe with buttermilk and adjust the amount of baking powder and baking soda. Also on top of everything they are EGGLESS. What pre preps are needed?
There are not many preps you have to do before baking these muffins. As I am saying use buttermilk. It's basically a mix of milk and vinegar. If you are out of vinegar you can also use lemon juice. Add 1 tsp of vinegar in 1 cup milk and let it rest for 5-10 min at the counter. You should be able to see some curdles in the milk and you are done. Make sure your milk is at room temp. It may be possible that you don't have granola at home then replace it with equal quantity of mix which includes, rolled oats, dried fruits, nuts and seeds. Please don't use raw seeds. Do roast them in oven for 10 min 180C. You can make these in multiple versions by changing the combination of dried fruits, nuts and seeds.
2 cups whole wheat flour
3 tbsp corn flour(Replace 3 tbsp of whole wheat flour with corn flour)
3/4 cup brown sugar(Powdered sugar)
1/3 cup oil(Use any flavourless oil)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/2 tsp cardamom powder
1/4 tsp salt
1 1/2 cup buttermilk
1 1/4 cup of granola mix(Use some for topping)
Prepare butter milk and set it aside.
Preheat your oven at 180C.
In a bowl sift all dry ingredients(flour, sugar, baking powder, baking soda, cinnamon & cardamom powder, salt and granola)
In another mix all wet ingredients(oil and buttermilk)
Now mix wet ingredients into dry and mix with very light hands.
Fill the muffins and top each with more granola.
Bake at 180C for 20-22 min.
Let them rest at kitchen counter for 10-15 min before eating. Serve with a glass of milk or juice. If you like the recipe and do try then don't forget to tag "bakeinline" and share pics with us.
