This no-bake eggless cheesecake is truly a treat to yourself. If you try this recipe you will be treating yourself with a dessert that's melt in the mouth, smooth and not overly sweet. Before sharing a baked cheesecake recipe with you I am sharing a no-bake version first because it's not overly heavy. It's a perfect dessert for a party.
Let's start making an eggless no-bake cheesecake.
What's a No-Bake Cheesecake?
As the name suggests it is a no-bake eggless cheesecake which doesn't call for an oven or other special tools. This is a rich, creamy and velvety cheesecake filling. It tastes like mousse. No-Bake here means you just need to mix the batter in a bowl and freeze it for some time and its ready. This particular recipe is gelatin-free. For any cheesecake, I think more than filling the biscuit base we use is the most important thing. It should always complement the cheesecake taste. Mostly you will see people using graham cracker but here we don't have this variety so you use any of the following biscuit variety:
Oreo(For chocolate flavour)
Hahahaha yes, Parle-G. The one biscuit we have grown up with. I somehow liked Parge-G more than digestive biscuits but you can pick whatever you like. As I am saying this is a no-bake so I would like you to portion it by your choice. I am using these small glasses to server. I found them really cute and the portion is perfect for one. You can also ramekins if you have.
One Base Multiple Flavours:
The cheesecake recipe I am sharing is just a base for all the different flavours you can come up with. Another benefit is I that today I am not using any EGG. This cheesecake filling is flavourless so the world is your oyster now. Go with my choice of 3 fillings or make your own, completely your choice.

Funfetti No-Bake Cheesecake
This is a no-bake dessert but not perfect to set in a big pan and cut into slices. So always portion it before chilling/serving.
How to make perfect No-Bake Cheesecake?
Like I said before, this is a very easy recipe. Beat the filling ingredients well, flavour it as per your choice then layer your dessert and let it set in the refrigerator. That's it!!! In a bowl beat whipping cream till stiff peaks, in second bowl mix rest of the ingredients. Fold everything together and you are good to go. Some key points you should know before trying the recipe:
Creamcheese: Make sure you are using cream cheese not cream cheese spread. These two are completely different. While making this cheesecake base your cream cheese has to be at room temp. This way you will be able to cream it fast and it won't get lumpy. I am using Dlecta Creamcheese.
Whipping Cream: It's really important to beat your whipped cream till stiff peaks. To do so your cream should be chilled. If possible then chill the bowl and your beater tools also. This process might take 10-15 min. You just need to stay calm while doing this. I am using Richs Whipping Cream.
Sour Cream: Add a little sour cream for that traditional tangy cheesecake flavour.
Lemon Juice: few drops of lemon juice enhances the overall flavour of the cheesecake so one shouldn't skip it. I am using Flanders Sour Cream.
240 g of cream cheese at room temp
150ml whipping cream
1/2 cup (100 g) powdered sugar
2-3 tbsp (30 g) sour cream
1 tsp lemon juice
1 tsp vanilla essence
In a bowl add whipping cream and beat it until it becomes stiff peaks. Set this aside until needed.
In a separate bowl add cream cheese and beat it for 2-3 min until it becomes lump-free. You can do this using a hand whisk also. Now add sour cream and mix well.
Now add sugar and beat for 2 min. Let sugar dissolve in the cream cheese.
At the end add lemon juice and vanilla essence. Now the base for the flavours is ready.
Cheesecake assembly: Divide the cheesecake base into 3 smaller bowls. We will add different layers for different flavours.
1. Bourbon Chocolate No-Bake Cheesecake
4-5 crushed bourbon biscuits
Assembly: Add half of the biscuit base and spoon half of the cheesecake base. Now top it up with remaining crushed biscuits, chocolate sauce and chocolate chips. Pour rest of the cheesecake base and garnish with half bourbon biscuit.
2. Peanut butter No-Bake Cheesecake:
2-3 tbsp peanut butter(crunchy/smooth)
Some Roasted peanuts
Some chocolate chips(optional)
4-5 crushed Parle-G biscuit
Assembly: In a bowl add 2-3 tbsp of crunchy or smooth peanut butter. Mix this well. Now in a glass jar add crushed base. Fill the glass with the peanut butter and cheesecake mix. Top with some roasted peanuts and chocolate chips.
3. Funfetti No-Bake Cheesecake:
4-5 crushed digestive biscuits
2-3 drops of gel pink food gel colour
Silver coloured sugar balls or any other sprinkles of choice
Assembly: In a bowl add the cheesecake base. Now add food gel colour and mix well. In the glass jar add the biscuit base and fill it with the cheesecake mix. Top it with the silver-coloured balls or coloured sprinkles.
