You must have tried market donuts sometime. Being it any flavour donuts are very very special. They attract both children and adults. In 2017 when I visited Singapore with my family then in Singapore Universal Studio we had Krispy Kreme donuts with coffee. It became such a wonderful memory for all of us. Until then I was baking homemade breads so I was very much aware with the basics of it and fillings. Then I thought of baking some at home too. Since then I am trying my hands over donuts again and again. I have become sort of an expert in both fried and baked donuts. Today I am sharing fried donuts with you. For next month I am planning of posting baked donuts too because YES fried donuts do absorb a lot of oil (If you are on a diet then plan to eat it over your cheat day :-) ).

Delicious Donuts are fantastically soft and melt-in-your-mouth. Donuts can be sugary and can be filled with your choice like Jam, Nutella, Jelly, Cream, Peanut Butter, Chocolate Ganache etc. There are endless options for the filling. This homemade donut recipe is the easiest one!!! 


My thought is that no one can resist the fluffy and tasty donuts because I can’t resist and love baking and eating them. Donuts are very easy to make at home if you use the correct recipe. So the wait is over and the easiest recipe is with you, try baking it and you are gonna love it.

How to activate Yeast?

In a small bowl add water and sugar. Put it into the microwave for 10-15 sec. This we will use activate yeast. So its temp should be around 35c. I can't tell you the exact here but if you put finger in it you should feel hot but not burning hot. It should be in a state that your skin can feel that yes it is hot but not too hot(Please get the expression here). Yeast works only with right temp. If the temp is either too low or too high either it will activate or will be killed and we don't want any of these states. Sprinkle yeast over the liquid and mix with a fork. Now let it sit over your kitchen counter for 10 min. Slowly you will start seeing small small bubbles. This means your yeast has been activated. If not then discard the liquid and start the whole process all over again. If you yeast isn't rising then there could be a possibility that your yeast has expired.


How to knead a bread dough?

Kneading can be done in 3 ways. You can use your stand mixer with dough hook, by using dough hook in your hand mixer or by HANDS(With a lot of elbow grease). Buying stand mixer is really expensive. So the cheap option in machine you have is a hand mixer. But if you are not into making breads so frequently then you can go for the lats option. With a hand mixer or stand mixer you knead to knead the dough for 10 min. It's going to be sticky dough. With hands you need to give 15 min with a timer. While you are in kneading stage, you can tell if your dough is under-kneaded if its floppy, tears easily and looks shaggy. Solution is knead more. Use stretch and fold method. Also in between take the dough in your hand and hit back the platform hardly. Do this 5-10 times in intervals while kneading. At the end you will yourself feel it has become soft and and shaggy. With this liquid quantity you will feel it's too soft to work on. So keep adding butter in between and if needed then some dry flour but not too much. Butter still you can add more. You butter should be either melted or soft. I never use oil in butter become the butter essence makes you bread smell fresh and aromatic.

Can I avoid egg in this recipe?

My answer to this question is YES. It's not needed but egg adds more dense flavour to the dough and make it more rich in flavour. But if you don't want to use egg ,you still will have amazing donuts.


Ingredients:

  1. 2 cups (250 g) all purpose flour

  2. 1/4th cup(50 ml) warm water

  3. 2 tsp sugar

  4. 2 tbsp milk powder

  5. 1.5 tsp dry active yeast

  6. 2 tbsp (30 g) melted butter

  7. 1 egg

  8. 1/2 tsp nutmeg powder(optional)

  9. 1/4 tsp salt

  10. 1/2 cup (100 ml) milk

Chocolate ganache:

  1. 100 g dark chocolate

  2. 50 g Amul's fresh cream

For Dusting:

  1. 1/2 cup granulates sugar

  2. 1 tbsp cinnamon powder

Method:

For ganache:

  1. Cut the chocolate in small pieces and add in a small bowl. Ina . separate pan heat you cream till it simmers.

  2. Add hot cream over the chocolate pieces. Let in sit as it is for 2 min. Using a spatula mix chocolate to make a smooth mix. Keep it in the fridge to get it to room temp.

For Dough:

  1. In a small bowl add water and sugar. Put it into the microwave for 10-15 sec. Sprinkle yeast over it and mix with a fork. Keep the mix aside for 10 min to activate yeast.

  2. In a separate bowl add your flour, milk powder, nutmeg powder and salt. Mix lightly with a wooden spatula or hands and make a small well in the centre.

  3. Add the activated yeast, milk and egg in the well. Now start kneading the dough. See instructions for kneading.

  4. Apply oil in the bowl and cover it with a cloth and keep this at the room temp for 1.5-2 hours. You will see that it has become double in size.

  5. Now apply some dry flour over the counter and with your clean hands knead dough for 2 min. This will knock out all air out of it. With a rolling pin roll, roll the dough until it is 2 cm in thickness. Now with a 3 inch donut cutter make circles. Re-roll scraps if needed.

  6. Place donuts on prepared baking sheet, cover with a tea towel and let rise in a 40c temp for 30 min or until puffed.

  7. In a deep dish add some oil and get to medium high temp. If temp is too low they will absorb too much oil and its too high they will become brown soon and are not cooked in the centre. Perfect temp is when put them in the oil it sits for time in the bottom and rises slowly(Like we fry samosa). Discard all extra oil and place over a paper towel to remove extra oil again.

  8. In a bowl add sugar and cinnamon to make homemade cinnamon sugar.

  9. Fill filling in a piping bag with a big round or start nozzle. Make a big hole in the donut from the side and fill some ganache in the centre. Now roll it slowly into cinnamon sugar.

Enjoy your homemade donuts with hot or cold coffee. They can made in advance and you can store them in an air tight container. Now you can give surprise to your family or friends. HAPPY EATING!!!!!!!!
