Traditional Itallian Almond Biscotti

What is a "Biscotti"?


Also known as "Cantuccini" in Italian. Biscotti means ‘twice-cooked’. And that's how we bake them. By baking them twice, we dry them out and they become crunchy. They are best served with a cup of coffee/Tea. It is simple and great tasting - soon it will become your favourite. If you have never tried it.... you should.


To enjoy this delicacy of Italy, you don't need to go Italy. You can make them at home and server one whenever you want.


Traditionally it is said that biscotti contains flour, sugar, eggs and almonds in them. There is no liquid and fat. That's what makes them hard and crunchy. As we are making them traditional, we will also not gonna use any liquid and fat.

For these biscotti you really don't need any special equipment/ingredients. This recipe can be put together easily just by your hands(Do we give time while beating and sugar). You can also adjust the log length and thickness as per your need. If you are a chocolate lover then you can dip them into chocolate and cover with chopped nuts.

Now we will focus on the recipe:


Ingredients:

  1. 80 gm brown sugar

  2. 1 large egg

  3. 100 gm all purpose flour

  4. Pinch of baking powder

  5. 60 gm almonds

  6. 1/4 tsp cardamom powder

Method:

  1. Beat egg and sugar for 2-3 min until it becomes light and fluffy.

  2. Now fold flour, baking powder, almonds and cardamom powder using spatula.

  3. This is going to be a sticky dough. Using dry flour give it a log shape and bake at 170C for 35-40 min.

  4. Let the log cool down for 20-30 min. Cut into 1'' inch slices and place onto the baking sheet once again.

  5. Bake for another 15 min at 170C by flipping half way through.
