Whole Wheat Apple Cinnamon Muffins
Apples are in season so why not use them in our baking series. With the apples I also decided to go with a healthy treat for myself and skip all purpose flour(maida) in the process. It is always fun to use fruits as they have unique taste and texture. Some are citrus and some are sweet. So every fruit needs different handling. They are soft, most and incredibly aromatic.

As these muffins gets a lot of flavour out of apples so your apples should be from a sweeter variety. You can definitely use green apple but it will cut short the sugar and you will have more of tangy flavour than sweet. So use red and juicy apple. For the sweetener you can go with any type of sugar you want like white granulated, light brown or dark brown. All will work fine, just to know dark brown sugar will make your muffins look darker and it will leave them with sharp taste. Now a days there are multiple variety of sugars available like coconut sugar, demerara sugar etc. All of these are healthy version so again pick whatever you like.

Apples and Cinnamon are besties. Using apple and not using cinnamon won't do justice to this recipe. 1 teaspoon of ground cinnamon will do its magic. I won't suggest you using any other spice. For the crunch part I am using walnuts. Walnuts here are completely optional. As you must have noticed my trend I am not a much frosting person. So we do need this crunch. You can also use almond or cashew but walnuts are typically used. Go with your vibe (no need to follow trend).

Some of you might be expecting it to be eggless. I am sorry I haven't tried its eggless version yet. But whenever possible I will defiantly post its eggless version too.
Tips for Making Muffins
Do not over mix your batter
Do not over bake them. As over baked muffins become dry and dry muffins are not good.
Use all ingredients at room temp.
You can either bake them in a greased muffin tray or use paper liner as I am using.
Use ice cream scoop for equal distribution of batter.
You can bake 12 regular sized muffins from this batter and 24 mini muffins.
Ingredients:
1 cup whole wheat flour (140 g)
1/2 cup (100 g) brown sugar
1 tsp grounder cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup walnuts chopped
1 large apple (cut into small pieces)
3/4 cup (170 ml) buttermilk
1 large egg
1/3 cup + 1 tbsp (80 ml) oil
1/4 tsp salt
Recipe:
In a large bowl sieve all dry ingredients like, flour, baking soda, baking powder, cinnamon, sugar and salt.
Now add your diced apple and walnuts in the dry ingredients.
In an another bowl mix wet ingredients like buttermilk, oil and egg.
Now using a spatula with very light hands mix lightly or until you stop seeing dry bits in the batter.
Now using an ice cream scoop or spoons pour enough batter in the mould.
Now bake your muffins in pre heated oven at 180c for 20-22 min.
Let them cool down for 10 before serving.
